Thomas Allinson was a Victorian pioneer of healthy eating who believed passionately in high quality, wholesome ingredients as well as fresh air and plenty of exercise. Since he launched his wholemeal flour in 1892, the Allinson flour company has developed a wide range of high quality flours and yeasts which give you consistent results every time. Just like Thomas Allinson, you know making it yourself makes sense.
250g unsalted butter, softened
250g Billington's golden caster sugar
2 large eggs, lightly beaten
1/2 tsp vanilla extract
500g Allinson Mix 'n' Bake plain flour
1 tsp baking powder
Makes 20 cookies
1. In a large mixing bowl cream the butter and caster sugar together until light and fluffy. Beat in the eggs and the vanilla extract.
2. In a separate bowl sift together the flour and the baking powder. Stir into the butter mixture. With floured hands form the mixture into a ball of dough.
3. Wrap the cookie dough in cling film and chill in the fridge for an hour.
4. Preheat the oven to 170°C/fan 150°C/325°F/ Gas Mark 3. Line a baking tray with baking paper.
5. Roll out the dough on a lightly floured surface to about 0.5cm thickness. Cut out the cookies and transfer to a baking tray.
6. Bake for 8-12 minutes until golden. Remove from the oven and allow to cool completely before decorating.
